Food Allergy

If you note any food allergy reaction whenever you or your love ones ate certain food ... from rashes, cough to asthma and anaphylactic reaction ... confirm it with an allergy test ... besides taking food allergen off the recipe and menu ... you need to ensure that there are no cross contamination from the worktop to equipments used ... read labels of packaged products ... unsured don't use ... it can be life threatening for someone with severe allergy and anaphylactic reaction.

Demi Glaze

Yeild: 0.5 lit

Ingredients:
  • 300 g bones, beef / veal / chicken / pork / lamb / fish
  • 1 lit stock, beef / veal / chicken / pork / lamb / fish
  • 50 g mirepoix
  • 30 g tomato paste
  • 50 ml red / white wine, (meat / fish)
  • 1 bay leaf
Procedure:
  1. preheat oven 230*C
  2. heat oil in roasting pan
  3. spread bones on pan ... roast for 20 mins
  4. turn for even browning
  5. spread mirepoix around bones ... brown in oven
  6. remove from oven ... drain oil
  7. over stove medium fire ... add tomato paste, red / white wine
  8. scrape the pan ... add stock, bay leaf
  9. bring to boil ... simmer till liquid reduced to one third
  10. strain ... skim off oil
  11. glaze should be thick and smooth
