Ingredients:
- 300 g bones, beef / veal / chicken / pork / lamb / fish
- 1 lit stock, beef / veal / chicken / pork / lamb / fish
- 50 g mirepoix
- 30 g tomato paste
- 50 ml red / white wine, (meat / fish)
- 1 bay leaf
- preheat oven 230*C
- heat oil in roasting pan
- spread bones on pan ... roast for 20 mins
- turn for even browning
- spread mirepoix around bones ... brown in oven
- remove from oven ... drain oil
- over stove medium fire ... add tomato paste, red / white wine
- scrape the pan ... add stock, bay leaf
- bring to boil ... simmer till liquid reduced to one third
- strain ... skim off oil
- glaze should be thick and smooth
