Food Allergy

If you note any food allergy reaction whenever you or your love ones ate certain food ... from rashes, cough to asthma and anaphylactic reaction ... confirm it with an allergy test ... besides taking food allergen off the recipe and menu ... you need to ensure that there are no cross contamination from the worktop to equipments used ... read labels of packaged products ... unsured don't use ... it can be life threatening for someone with severe allergy and anaphylactic reaction.

Fresh Onion Soup

Yield: 7 lit
Ingredients:
  • 100 g butter
  • 2.5 kg onion, thinly sliced
  • 6.5 lit beef / chicken stock
  • to taste salt
  • to taste pepper
  • 100 ml sherry (optional)
  • as needed french bread
Garnish
  • 700 g gruyere cheese
Procedures:
  1.  heat butter in stock pot ... over moderate heat ...
  2. add onions slowly ... cook till evenly golden .. about 30 mins ... do not brown
  3. add stock ... bring to boil ... simmer till onions are tender ... flavor well blend ... about 20 mins
  4. season to taste with salt, pepper ... add sherry ... keep soup hot
  5. cut french bread into slices ... 1 cm thick ...
  6. toast slice into oven
  7. before serving cover soup with slice bread ... cover with cheese ...
  8. lightly brown cheese under a broiler (or)
  9. to make cheese croutons ... toast bread ... brush with butter ... sprinkle with grated cheese ... brown under broiler ... garnish before serving
