Ingredients;
- 100 ml olive oil
- 400 g onion, thinly slice
- 200 g celery, dice
- 200 g carrot, dice
- 10 g garlic, chopped
- 200 g green cabbage, shredded
- 200 g zucchini, dice
- 400 g canned tomato, crushed
- 5 lit basic white stock
- 5 g basil
- 200 g pasta, macaroni
- 700 g canned cannellini beans or other white beans, drained
- 60 g parlsy, chopped
- to taste salt
- to taste ground white pepper
- as needed parmesan cheese, grated
- heat oil in pot ... over medium heat
- add onions, celery, carrots, garlic ... sweat till almost tender ... do not brown
- add cabbage, zuchinni ... mix vegetable ... sweat another 5 mins
- add tomatoes, stock, basil ... bring to boil ... reduce heat ... simmer till vegetables almost cooked .. do not over cook
- add pasta ... bring to boil
- add parsley ... season to taste with salt, pepper
- just before serving ... sprinkle parmesan cheese or serve it separately
