Food Allergy

If you note any food allergy reaction whenever you or your love ones ate certain food ... from rashes, cough to asthma and anaphylactic reaction ... confirm it with an allergy test ... besides taking food allergen off the recipe and menu ... you need to ensure that there are no cross contamination from the worktop to equipments used ... read labels of packaged products ... unsured don't use ... it can be life threatening for someone with severe allergy and anaphylactic reaction.

Split Pea Soup

Yeild: 6 lit

Ingredients:
  • 200 g salt pork
  • 6 lit ham stock or water
  • 1 no ham hock or ham bone (optional)
  • 1.5 kg green split peas
  • to taste salt
  • to taste pepper
Mirepoix
  • 300 g onions, diced
  • 150 g celery, diced
  • 150 g carrots, diced
Sachet
  • 1 no bay leaf
  • 2 no whole cloves
  • 6 no black peppercorn

Procedure:
  1. finely diced salt pork ... cook slowly in sauce pot ... do not brown
  2. add mirepoix ... sweat in the fat till vegetable are soften
  3. add ham stock or water ... ham bone if use ... bring to boil
  4. rinse split peas ... strain ... add to stock ... add sachet
  5. cover and simmer till peas are soft ... about 1 hour
  6. remove sachet and ham bone if used ...
  7. puree soup with a blender
  8. bring soup to a simmer ... add stock or water to get the correct consistency
  9. season to taste
