Ingredients:
- 200 g salt pork
- 6 lit ham stock or water
- 1 no ham hock or ham bone (optional)
- 1.5 kg green split peas
- to taste salt
- to taste pepper
- 300 g onions, diced
- 150 g celery, diced
- 150 g carrots, diced
- 1 no bay leaf
- 2 no whole cloves
- 6 no black peppercorn
Procedure:
- finely diced salt pork ... cook slowly in sauce pot ... do not brown
- add mirepoix ... sweat in the fat till vegetable are soften
- add ham stock or water ... ham bone if use ... bring to boil
- rinse split peas ... strain ... add to stock ... add sachet
- cover and simmer till peas are soft ... about 1 hour
- remove sachet and ham bone if used ...
- puree soup with a blender
- bring soup to a simmer ... add stock or water to get the correct consistency
- season to taste
