- 900 g balck beans
- 50 ml olive oil
- 250 g onion diced
- 4 garlic chopped
- 60 g fresh green chilli / jalapeno chopped
- 60 g chili powder
- 8 g ground cumin
- 8 g ground coriander
- 1 bay leaf
- 5 lit vegetable stock / water
- 500 g canned tomatoes, drained, chopped
- to taste salt
- to taste hot pepper sauce
- 250 g avocado dice for garnish
- 250 g tomato diced for garnish
Procedure:
- soak beans in cold water overnight
- heat oil in soup pot over moderate heat
- add onions, garlic, jalapeno ... cook over moderate heat
- add chilli powder, cumin, coriander, bay leaf ... mix well
- add stock / water ... drain beans ... add to pot
- cover and simmer till beans are tender
- add tomatoes ... simmer for 15-30 mins ... till beans are tender
- add salt, hot pepper sauce to taste
- before serving ... garnish with dice avocado and tomato
