Fish Stock / Fumet

Ingredients:
- Fish Bones 200 gm
- Oil 20 ml
- White Bouquet Garni 1 no
- Water 1.2 lit
- White Wine 50 ml
- White Peppercorn Crushed 5 no
Procedure:
- blanch bones in boiling water ... refresh ...
- add bones to a pot of fresh water ...
- add bouquet garni ... peppercorn .. white wine ...
- bring to a boil ... skim frequently ...
- lower fire ... simmer for about 20 to 25 mins
- strain ... reboil ...
- use according to recipe ...
