Mushroom Sauce

Yeild: 1 lit

Ingredients:
  • 1 lit chicken veloute
  • 1 tspn shaollot, chopped
  • 100 g fresh mushroom, sliced
  • pinch thyme
  • pinch salt
  • pinch pepper
  • 2 tbsp cream
Procedure:
  1. bring stock boil
  2. whisk in roux bid by bid ... till creamy
  3. simmer over low fire for about 45 mins
  4. blend and strain ...
  5. bring to boil ... season to taste
