Mornay Sauce

Yeild: 0.5 lit

Ingredients:
  • 30 g butter
  • 50 g flour
  • 20 g onion, sliced
  • 1 lit milk
  • 1 clove
  • 1 bay leaf
  • pinch salt
  • pinch pepper
  • pinch nutmeg
  • 50 g parmesan cheese, grated


Procedure:
  1. sweat onions with butter ...
  2. add flour ... stir till cook ... do not burn ...
  3. add warm milk, clove ... whisk till well mix ...
  4. bring to boil ... lower fire ...
  5. add bay leaf, nutmeg, pepper, salt
  6. simmer for 30 mins ... check consistency and taste ...
  7. strain ... add parmesan cheese ... mix well ...
  8. add some butter ... to prevent skin forming on surface
