- 8 slices bacon, chopped
- 1 onion, finely chopped
- 8 cloves garlic, thinly sliced
- 28 oz / 828 ml can crushed tomatoes
- 1 tablespoon fresh thyme, rosemary or oregano
- a sprinkle or two salt
- grated pepper
Instructions:
- cook bacon over medium-high heat ... with a splash of water ... until water evaporates ...
- lower heat ... stir until bacon is crispy and brown ...
- add the onion and garlic ... cook till soften ... and caramelize ...
- add tomatoes ... add water from rinsing can ...
- add herbs ... season with salt and pepper ...
- simmer for 20 minutes or so...
Note:
- cook pasta in lots of boiling salted water
- strain and toss with the sauce
