Fish Sauce (White Wine Sauce)

Yeild: 1 lit

Ingredients:
  • 100 m white wine
  • 700 ml basic fish stock
  • 80 g roux
  • 100 ml fresh cream
  • 10 ml lemon juice
  • pinch salt
  • pinch pepper
  • 10 g butter
Procedure:
  1. reduce white wine by half in saucepan
  2. add warm fish stock ... whisk roux bit by bit
  3. simmer for 15 min ... strain
  4. add cream, lemon juice, salt, pepper
  5. blend in butter gradually
  6. season to taste
