Gulyas / Goulash

Yeild: 3 lit

Ingredients:
  • 60 g pork fatback or bacon
  • 250 g onions, diced
  • 700 g beef chuck or shank, diced
  • 1 cloves, chopped
  • 3 g whole caraway seed
  • 30 g paprika
  • 15 g tomato paste
  • 3 lit water or brown stock, hot
  • 400 g potatoes, peeled, diced
  • to taste salt
  • to taste pepper

Procedure:
  1. grind or dice pork fatback or bacon ... render fat in pot ... drain fat ...
  2. sweat onion in fat ... do not burn ...
  3. add diced beef to onions ... cooked over low heat for 10 mins
  4. add garlic, caraway seeds, paprika, tomato paste ... mix well ...
  5. add water / stock ... simmer till beef is almost tender ... about 1 hour or more ...
  6. add potatoes ... simmer till done ...
  7. season to taste with salt, pepper
