Ingredients:
- 60 g pork fatback or bacon
- 250 g onions, diced
- 700 g beef chuck or shank, diced
- 1 cloves, chopped
- 3 g whole caraway seed
- 30 g paprika
- 15 g tomato paste
- 3 lit water or brown stock, hot
- 400 g potatoes, peeled, diced
- to taste salt
- to taste pepper
Procedure:
- grind or dice pork fatback or bacon ... render fat in pot ... drain fat ...
- sweat onion in fat ... do not burn ...
- add diced beef to onions ... cooked over low heat for 10 mins
- add garlic, caraway seeds, paprika, tomato paste ... mix well ...
- add water / stock ... simmer till beef is almost tender ... about 1 hour or more ...
- add potatoes ... simmer till done ...
- season to taste with salt, pepper
