Mushroom Brown Sauce

Yeild: 4 lit

Ingredients:
  • 250 g slice mushrooms
  • 30 g shallot
  • 60 g butter
  • 1 lit demi glaze
  • 60 ml sherry wine
  • 2 drops lemon juice
Procedure:
  1. saute mushrooms, shallots in butter till brown
  2. add demi glzed ... simmer 10 mins
  3. add sherry ... lemon juice
